On Thursday February 15th, Mrs. Banfield was inducted into the Academy for Teachers whose mission is to “honor and support teachers through world-class learning experiences”. She was invited to be a speaker for the Master Class “Black Cooking and the Soul of American Food”. Mrs. Banfield discussed how fermentation had an impact on the bioevolution of humanity which explored theories which suggest that the modification of the human gastrointestinal microbiome may have contributed to brain expansion and cognitive development in hominins.
This Master Class was led by Marcus Samuelson, world-renowned chef/owner of the Red Rooster and other acclaimed eateries. Chef Samuelson discussed his journey into the global culinary elite, the chemical composition of food and how food can honor traditions while fostering human connection. On The Rise that explores the delicious yet complicated history of Black cuisine in America.
